Strawberry Banana Bread


This strawberry banana is made from wheat flour, coconut sugar, Greek yogurt and is filled with fresh, juicy strawberries. It is absolutely moist, soft and absolutely delicious!


I don't know about you, but I love banana bread and as it is the strawberry season I wanted to make a strawberry version of my healthy banana bread.


In this recipe I used whole wheat pastry flour to get a simple and soft bread. This bread is naturally sweet with coconut sugar and I used Greek yogurt to keep the bread moist and change some of the fat. And let’s not forget the fresh strawberries that are everywhere. They really are the star of the show.

Ingredients and Substitutions

whole wheat flour flour - wheat flour flour is a simple wheat flour that gives baked goods a really lovely texture! My name to which I go is Bob’s Red Mill wheat flour. All-purpose flour is small in size and regular wheat can be used, but the texture will be mild. I have not tested this with gluten-free flour but you should be able to replace wheat pastry flour with a 1: 1 gluten-free mixture.

baking soda - something that makes bread rise.

sea ​​salt - adds flavor, but is also important for process growth!

cinnamon - this spice is perfectly compatible with other bread flavors.

avocado oil - helps to keep bread moist. I like to use avocado oil because it has a neutral flavor and is rich in heart-healthy monounsaturated fats, which are associated with lowering cholesterol. And it is low in saturated fat compared to other common baking oils such as coconut oil. 1 teaspoon of avocado oil contains only 2 grams of saturated fat while coconut oil contains 11 grams! Butter and any neutral oil such as vegetable oil, olive oil or canola oil will work instead.

eggs - help to combine wet and dry ingredients together. I have not tried using flaxseed eggs but they should work as a substitute.

Greek yoghurt - a small trick in the world of baking, clear Greek yogurt helps the bread rise! It also adds moisture. The result is a soft, light bread. If you need this recipe without milk I bet using a milk-free yogurt will work well.

coconut sugar - a slow-release development of granulated sugar or brown sugar. If you do not have coconut sugar on hand, brown sugar or white sugar will work as a component.

vanilla extract - an important flavor of banana bread.

bananas - the star of the show! Be sure to use ripe bananas with brown spots on them. Older, darker, mushier, the better!

strawberries - another star of the show. Be sure to use fresh strawberries and dry them lightly with a paper towel after washing. Keep some slices to place the bread when the dough is in the pan.


How To Make This Strawberry Bread Recipe

Start by heating your oven to 350 ° F. Combine flour, baking soda, salt and cinnamon in a medium bowl.


Put the oil, coconut sugar, eggs, frozen bananas, Greek yogurt and vanilla in a large bowl and whisk together until combined.


Add the flour mixture to the wet mixture and stir until just combined. Finely chop the chopped berries.


Pour the dough into a bread pan covered with cooking spray. Top with slices of strawberry. Bake for 60-75 minutes or until a wooden toothpick inserted in the center comes out clean.


When you are done cooking, remove from the oven and allow to cool for 10 minutes in the pan and then remove from the pan and allow to cool completely in the oven.


Success Tips

Be sure to wipe your chopped strawberries with a paper towel before mixing them into the batter. This will help prevent the bread from becoming too wet or too wet.

When mixing your dry and wet ingredients make sure you mix until just combined and do not overcook, otherwise, your bread may be too thick or rubber. It is fine even if there are a few strands of flour left over as it will mix when you add the strawberries.

For about 45 minutes mark I recommend covering the bread with tin foil so that it does not become too brown.

When you are done cooking, allow the bread to cool for about 10 minutes in a pan and remove to allow it to cool completely in the oven. Do not leave the bread in the pan for too long as it will continue to bake and stop or start to thicken.


How to Serve

Few things are better than fresh, warm banana bread! I could not eat this bread at any time of the day. Here are some ideas:


Enjoy a delicious breakfast with peanut butter, fresh strawberries and honey toppings. Combined with a glass of cold drink coffee and have a wonderful morning.

Spread a little butter and this strawberry chia jam to get the flavor.

Sprinkle with a slice of bread and place the ricotta on top with the dripping honey. Milk-free ricotta can also work! Kite Hill almond milk ricotta is excellent!

Serve it brunch next to my quiche of spinach, fruit salad and mimosa.


How to Save Remains

Did you know that keeping your banana bread in the fridge will actually dry up? Wrap banana bread in plastic wrap or keep it in an airtight container on your table for up to four days.


If you need to keep it longer, you can freeze it for up to 3 months! You can freeze whole bread or cut it in advance for easy use when you are ready to melt and enjoy. I like to use my Stasher bags to store. To melt, place the bread in the refrigerator overnight, at room temperature or bake in the microwave oven or toaster oven.
